Baked Sweet and Sour Chicken

This recipe is a healthier version of the classic Chinese takeout dish. It is easy to make and tastes just as delicious as the restaurant version.

Ingredients:

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 1 cup cornstarch
  • 2 eggs, beaten
  • 1/4 cup oil for frying
  • 1/2 cup sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup ketchup
  • 2 tbsp soy sauce
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup pineapple chunks, canned or fresh
  • Rice for serving

Instructions:

  1. Preheat your oven to 350°F.
  2. Place the cornstarch in a shallow dish. Dip the chicken pieces in the beaten eggs, then coat them in the cornstarch.
  3. Heat the oil in a large pan over medium heat. Add the chicken pieces and cook until they are golden brown on both sides, about 2-3 minutes per side.
  4. In a separate bowl, mix together the sugar, apple cider vinegar, ketchup, and soy sauce.
  5. Place the chicken in a baking dish and top with the bell peppers, pineapple, and sauce mixture.
  6. Bake in the oven for 20-25 minutes or until the chicken is cooked through.
  7. Serve the sweet and sour chicken over rice and enjoy!
