Quinoa and Black Bean Salad

This recipe is perfect for a quick and healthy lunch or dinner. The combination of quinoa and black beans makes for a filling and protein-packed salad.

Ingredients:

  • 1 cup quinoa, cooked according to package instructions
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, frozen or canned
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the cooked quinoa, black beans, cherry tomatoes, corn, red onion, and cilantro.
  2. In a small bowl, whisk together the olive oil and red wine vinegar.
  3. Pour the dressing over the quinoa mixture and toss to combine.
  4. Season with salt and pepper to taste.
  5. Serve and enjoy!
