Baked Sweet and Sour Chicken
This recipe is a healthier version of the classic Chinese takeout dish. It is easy to make and tastes just as delicious as the restaurant version.
Ingredients:
- 1 lb chicken breasts, cut into bite-sized pieces
- 1 cup cornstarch
- 2 eggs, beaten
- 1/4 cup oil for frying
- 1/2 cup sugar
- 1/4 cup apple cider vinegar
- 1/4 cup ketchup
- 2 tbsp soy sauce
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 cup pineapple chunks, canned or fresh
- Rice for serving
Instructions:
- Preheat your oven to 350°F.
- Place the cornstarch in a shallow dish. Dip the chicken pieces in the beaten eggs, then coat them in the cornstarch.
- Heat the oil in a large pan over medium heat. Add the chicken pieces and cook until they are golden brown on both sides, about 2-3 minutes per side.
- In a separate bowl, mix together the sugar, apple cider vinegar, ketchup, and soy sauce.
- Place the chicken in a baking dish and top with the bell peppers, pineapple, and sauce mixture.
- Bake in the oven for 20-25 minutes or until the chicken is cooked through.
- Serve the sweet and sour chicken over rice and enjoy!
