Banana Oatmeal Cookies
Banana oatmeal cookies are easy to make, and are a healthy and delicious alternative to traditional cookies.
Ingredients:
- 2 ripe bananas, mashed
- 1 ½ cups of old-fashioned rolled oats
- 1/4 cup of peanut butter or almond butter
- 1/4 cup of honey
- 1/4 cup of raisins or chopped nuts (optional)
Instructions:
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine the mashed bananas, rolled oats, peanut butter, and honey (plus the optional raisins or nuts).
- Mix well until all ingredients are combined.
- Drop spoonfuls of the mixture onto the lined baking sheet and flatten each cookie with a fork.
- Bake for 15-20 minutes or until the cookies are golden brown.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
