Banana Oatmeal Cookies

Banana oatmeal cookies are easy to make, and are a healthy and delicious alternative to traditional cookies.

Ingredients:

  • 2 ripe bananas, mashed
  • 1 ½ cups of old-fashioned rolled oats
  • 1/4 cup of peanut butter or almond butter
  • 1/4 cup of honey
  • 1/4 cup of raisins or chopped nuts (optional)

Instructions:

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mashed bananas, rolled oats, peanut butter, and honey (plus the optional raisins or nuts).
  3. Mix well until all ingredients are combined.
  4. Drop spoonfuls of the mixture onto the lined baking sheet and flatten each cookie with a fork.
  5. Bake for 15-20 minutes or until the cookies are golden brown.
  6. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Serving suggestion: Serve as a simple dessert or a sweet snack during the day.
