Strawberry Shortcake

Strawberry Shortcake is a classic American dessert. Famous for its light and fluffy cake, juicy strawberries, and whipped cream topping, it’s perfect as a simple to make dessert or anytime you’re in the mood for a classic sweet treat.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 2 cups sliced fresh strawberries
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh mint leaves (optional)

Instructions:

  1. Preheat oven to 350°F (or 175°C).
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream the butter and sugar together until light and fluffy. Beat in the egg and vanilla.
  4. Add the dry ingredients to the butter mixture in three parts, alternating with the milk and mixing until combined.
  5. Pour the batter into an 8-inch square baking dish and bake for 20-25 minutes. You can tell if the cake is done if you can stick a toothpick in the center and it comes out clean.
  6. Allow the cake to cool
  7. Slice the cake into 6-8 squares.
  8. In a medium bowl, mix together the sliced strawberries and 1/4 cup of granulated sugar until the strawberries release their juices and the sugar dissolves.
  9. In a separate bowl, beat the heavy cream and powdered sugar until you can see soft peaks form.
  10. To assemble the shortcakes, place a square of cake on a plate, spoon some of the strawberry mixture on top, and add a dollop of whipped cream. Repeat with another layer of cake, strawberries, and whipped cream.
  11. Garnish with fresh mint leaves, if desired, and serve immediately.
