Strawberry Shortcake
Strawberry Shortcake is a classic American dessert. Famous for its light and fluffy cake, juicy strawberries, and whipped cream topping, it’s perfect as a simple to make dessert or anytime you’re in the mood for a classic sweet treat.
Ingredients:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 2 cups sliced fresh strawberries
- 1 cup heavy cream
- 1/4 cup powdered sugar
- Fresh mint leaves (optional)
Instructions:
- Preheat oven to 350°F (or 175°C).
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, cream the butter and sugar together until light and fluffy. Beat in the egg and vanilla.
- Add the dry ingredients to the butter mixture in three parts, alternating with the milk and mixing until combined.
- Pour the batter into an 8-inch square baking dish and bake for 20-25 minutes. You can tell if the cake is done if you can stick a toothpick in the center and it comes out clean.
- Allow the cake to cool
- Slice the cake into 6-8 squares.
- In a medium bowl, mix together the sliced strawberries and 1/4 cup of granulated sugar until the strawberries release their juices and the sugar dissolves.
- In a separate bowl, beat the heavy cream and powdered sugar until you can see soft peaks form.
- To assemble the shortcakes, place a square of cake on a plate, spoon some of the strawberry mixture on top, and add a dollop of whipped cream. Repeat with another layer of cake, strawberries, and whipped cream.
- Garnish with fresh mint leaves, if desired, and serve immediately.
