One-Pot Taco Pasta

Ingredients:
- 1 pound ground beef or turkey
- 1 packet taco seasoning mix
- 2 cups uncooked rotini pasta
- 1 can diced tomatoes with green chilies, undrained
- 1 cup frozen corn kernels
- 2 cups beef or chicken broth
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions:
- In a large pot or skillet, brown the ground beef or turkey over medium-high heat, breaking it up into small crumbles.
- Drain any excess fat, if necessary, and stir in the taco seasoning mix.
- Add the uncooked rotini pasta, diced tomatoes with green chilies, frozen corn, and broth to the pot.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the pasta is tender.
- Stir in the shredded cheddar cheese until it’s fully melted and creamy.
