Black Bean and Sweet Potato Tacos

This recipe is perfect for a quick and easy vegetarian meal. The combination of black beans and sweet potatoes makes for a filling and delicious taco filling.

Ingredients:

  • 1 sweet potato, peeled and diced
  • 1 cup cooked black beans
  • 1 tbsp taco seasoning
  • 8 small tortillas
  • Toppings of your choice (we recommend avocado, cherry tomatoes, and microgreens)

Instructions:

  1. Heat a pan over medium heat and add the diced sweet potato. Cook until tender, about 8-10 minutes.
  2. Add the cooked black beans and taco seasoning to the pan. Stir to combine.
  3. Assemble the tacos by placing a spoonful of the sweet potato and black bean mixture onto each tortilla.
  4. Top with your desired toppings and serve.
