Black Bean and Sweet Potato Tacos
This recipe is perfect for a quick and easy vegetarian meal. The combination of black beans and sweet potatoes makes for a filling and delicious taco filling.
Ingredients:
- 1 sweet potato, peeled and diced
- 1 cup cooked black beans
- 1 tbsp taco seasoning
- 8 small tortillas
- Toppings of your choice (we recommend avocado, cherry tomatoes, and microgreens)
Instructions:
- Heat a pan over medium heat and add the diced sweet potato. Cook until tender, about 8-10 minutes.
- Add the cooked black beans and taco seasoning to the pan. Stir to combine.
