Spinach and Feta Stuffed Mushrooms

These savory stuffed mushrooms are a delightful blend of spinach, feta cheese, and herbs, making them a hit at any gathering.

Ingredients:

  • 16 large white mushrooms (stems removed and reserved)
  • 1 cup frozen chopped spinach (thawed and drained)
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons breadcrumbs
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Chop the mushroom stems finely and set aside.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and chopped mushroom stems. Cook until softened.
  4. Stir in the thawed spinach and cook until any excess moisture has evaporated.
  5. Remove the skillet from heat and stir in the feta cheese and breadcrumbs. Season with salt and pepper.
  6. Fill each mushroom cap with the spinach and feta mixture and place them in the baking dish.
  7. Bake in the preheated oven for about 15 minutes or until the mushrooms are tender and the filling is lightly browned.

Serving Suggestion:

Serve the stuffed mushrooms warm, sprinkled with additional crumbled feta and a sprinkle of fresh parsley for an extra burst of color and flavor.
