Spinach and Feta Stuffed Mushrooms
These savory stuffed mushrooms are a delightful blend of spinach, feta cheese, and herbs, making them a hit at any gathering.
Ingredients:
- 16 large white mushrooms (stems removed and reserved)
- 1 cup frozen chopped spinach (thawed and drained)
- 1/2 cup crumbled feta cheese
- 2 tablespoons breadcrumbs
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Chop the mushroom stems finely and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and chopped mushroom stems. Cook until softened.
- Stir in the thawed spinach and cook until any excess moisture has evaporated.
- Remove the skillet from heat and stir in the feta cheese and breadcrumbs. Season with salt and pepper.
- Fill each mushroom cap with the spinach and feta mixture and place them in the baking dish.
- Bake in the preheated oven for about 15 minutes or until the mushrooms are tender and the filling is lightly browned.
