Loaded Potato Skins

These loaded potato skins are the epitome of comfort food, packed with cheesy goodness and savory toppings. These delicious bites are great for parties, family gatherings, or as a comforting treat on a chilly day.

Ingredients:

  • 6 small russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 green onions (chopped)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Scrub the potatoes clean and pat them dry.
  3. Place the potatoes on the baking sheet and bake for about 40-45 minutes or until tender.
  4. Let the potatoes cool slightly, then cut them in half lengthwise.
  5. Scoop out the potato flesh, leaving a thin layer on the skins.
  6. In a bowl, mix the scooped potato flesh with shredded cheddar cheese, crumbled bacon, and sour cream.
  7. Season with salt and pepper to taste.
  8. Spoon the mixture back into the potato skins.
  9. Place the filled potato skins back on the baking sheet and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.

Serving Suggestion:

Garnish the mini loaded potato skins with chopped green onions before serving.
